Sweet Tigernut “Nut” Butter

I used to absolutely love almond, cashew, and peanut butter. Once I realized I was intolerant of nuts, I discovered Tigernuts as an excellent substitute. Tigernuts are technically a root vegetable so they’re safe for people on Autoimmune Protocols or those with nuts allergies. This is a sweet “nut” butter which is full of healthy fat, potassium, iron, and is wonderful on an apple slice, or in a coconut flour wrap for a treat or mid-afternoon pick-me-up. It takes a few minutes of blending, but the end result is worth it.

Sweet Tigernut “Nut” Butter

Ingredients

  • 2 Cups tigernuts We like Organic Gemini brand
  • 1 cup coconut oil plus more as needed
  • 1 tsp sea salt to taste
  • 1/2 tsp vanilla extract
  • 2 scoop The Myers Way® Paleo Protein Powder Flavor of your choice
  • 5 drops Liquid Stevia (optional)

Instructions

  1. Soak Tigernuts 12-24 hours in a large bowl of water. After soaking for 12-24 hours, drain Tigernuts.
  2. Place all ingredients into a high speed blender and blend until creamy. Stream in more coconut oil as needed to wet mixture and create a paste consistency. Scrape down the sides of the blender as needed (it will likely take a few minutes of scraping down the sides and re-blending to form the proper paste consistency).
  3. Store in a glass jar in the fridge and use as desired.
