Spiced Cabbage and Kale with Sweet Onions

Not a big fan of raw cabbage or kale? This recipe eliminates all the bitterness of the raw veggies and adds savory and sweet spices to create a delicious side dish packed full of nutrition.

Spiced Cabbage and Kale with Sweet Onions

Ingredients

  • 1 Tbsp coconut oil plus more as needed
  • 1 sweet onion chopped
  • 4 cups green cabbage about 1/2 head, sliced
  • 1/8 tsp turmeric
  • 1/4 tsp ginger powder
  • 1/8 tsp garlic powder
  • 1/4 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/8 tsp cumin
  • 1/4 tsp sea salt
  • 1/8 tsp ground black pepper
  • 2 cups kale chopped

Instructions

  1. Heat coconut oil in large pan over medium heat. Add onion and let cook for about 3 minutes.
  2. Add cabbage and stir occasionally. After the cabbage starts to soften, about 3-5 minutes, add turmeric, ginger powder, garlic powder, cinnamon, nutmeg, cumin, sea salt, and ground pepper. Mix well to incorporate spices. Let cook until onions and cabbage are very tender. Add more oil if veggies start to dry out.
  3. Add kale and cook for another 2 minutes to let soften before serving.
