Slow Cooked Chicken Thighs with Cilantro Cauliflower Rice

Ingredients

  • 2 lbs chicken thigh skinless
  • 2 tbsp cumin
  • 2 tbsp garlic powder
  • 1 red onion thinly sliced
  • 2 cups bone broth
  • 1/2 cup cilantro finely chopped
  • lime juice from one small lime
  • 1 tsp sea salt
  • 6 servings Cilantro Cauliflower Rice

Instructions

  1. Coat chicken thighs in cumin, garlic powder, salt and pepper. Place in crock pot with onions, cilantro, and lime juice. Add sliced onions and bone broth. Cook on high for 6 hours, or cook on low for approximately 10-12 hours.
  2. Prepare cauliflower rice according to directions.
  3. When chicken is done, shred and serve over cauliflower rice.
