Quick & Crunchy Cucumber Salad

I had a lot of cucumbers in my fridge which inspired this Quick & Crunchy Cucumber Salad.  It takes less than 5 minutes and is great for lunch or a side salad.

Quick & Crunchy Cucumber Salad

Ingredients

  • 1/2  cucumber peeled and cubed
  • 1/2 avocado cubed
  • 3/4 cup chicken cooked, cubed or shredded
  • 1/4 mango cubed
  • 1/4 cup walnuts
  • 1 tsp lemon juice
  • 1/2 tsp sea salt to taste

Instructions

  1. Mix all ingredients together in a serving bowl. 
  2. If making ahead of time, wait to add avocado for freshness.
