Ingredients

  • 1 cup pecans
  • 1 cup cashews
  • 2 cups Medjool dates pitted and chopped
  • 1 scoop The Myers Way® Double Chocolate Paleo Protein (plus more for dusting)
  • 1 1/2 tsp peppermint extract
  • 1/4 tsp sea salt
  • 1/4 cup unsweetened shredded coconut

Instructions

  1. Line baking sheet or pan with parchment paper.
  2. In a food processor, pulse the cashews until finely chopped. Add the pecans, dates, The Myers Way® Double Chocolate Paleo Protein, and salt and pulse until dough comes together.
  3. Sprinkle in the peppermint extract and pulse again to combine.
  4. Using a tablespoon, roll the dough into tight balls and dust in cocoa powder and coconut flakes.
  5. Place dough balls on parchment paper and place them in the refrigerator for 20-30 minutes. Once brownie bites have had a chance to set, remove from refrigerator and enjoy!
