The Myers Way® Trail Mix

Snacking can sometimes be difficult when following an AIP, elimination, or Paleo diet. Without convenience foods such as grains, nuts, or sugar, what’s left to munch on? Thanks to healthy, easy-to-prepare substitutes such as coconut chips, dried fruit, and tiger nuts, The Myers Way® Trail Mix makes snacking on a diet easier (and more guilt-free) than ever! 

This trail mix is a simple snack to throw together before heading out the door and makes for easy storage so that you can snack on the go. I suggest making large batches of this trail mix to keep in your purse, car, and pantry.

Dried Fruit

Dried mango is a sweet and delicious source of vitamin A, calcium, and potassium, which support a healthy immune system, bone health, and can reduce your risk of acne. Apples and bananas are great sources of soluble fiber. Soluble fiber forms a gel when mixed with liquid in your stomach, temporarily slowing the digestive process and allowing you to obtain maximum nutrition from your food. 

They also slow the uptake of cholesterol and sugar from your food, keeping your blood sugar and cholesterol low and suppressing spikes in blood glucose that occur after a carbohydrate-rich meal. 

I added coconut chips for an added crunch and boost of dietary fiber to keep you full. Combined, these fruits are a wonderful mixture of nutrients to help keep you energized throughout the day.

Tiger Nuts

While nuts are not recommended for an AIP or elimination diet, you can still enjoy tiger nuts as part of The Myers Way® Trail Mix. Why? Tiger nuts are actually a tuber that grows below the ground, however, they resemble a nut in size, shape, and flavor. Tiger nuts are gluten-free, dairy-free, nut-free, Paleo, and are a fantastic food for maintaining a healthy weight.

Tiger nuts are small, however one serving packs in A LOT of nutrients. They’re a great energy booster, have a ton of protein and fiber, and can help improve digestion, reduce blood sugar levels, and give your immune system a boost.

  • 1 cup coconut chips toasted (not coconut flakes)
  • 1 cup dehydrated mango
  • 1 cup unsweetened banana chips
  • 1 cup tigernuts preferably peeled
  • 1 cup dried apple

Instructions

  1. Combine all ingredients and store in small containers for easy snacking on the go.
