Hawaiian Chicken Kabobs

This simple yet crowd-pleasing recipe will win everyone over at your spring or summer cookout! The pineapple marinade used in this recipe adds a citrusy summer flair to every bite!

Hawaiian Chicken Kabobs

Ingredients

Marinade
  • 3 tbsp pineapple juice
  • 1 tbsp honey *avoid if following The Myers Way® or AIP diet
  • 3 tbsp bone broth
  • 1 tbsp apple cider vinegar
  • 1 tbsp sesame oil
  • 1 tbsp ginger diced
  • 3 cloves garlic minced
Kabobs
  • 1 lb chicken cubed
  • 1 cup pineapple squared
  • 1 zucchini
  • 1 squash
  • 1 red onion cut into 1 inch pieces
  • skewers

Instructions

  1. Combine marinade ingredients. Place chicken into a large dish or bowl and cover with marinade. Allow to marinate in refrigerator for 2-3 hours or overnight.

  2. In the meantime, soak skewers in water (if wooden).

  3. Place veggies and chicken on skewers in whatever order you chose.

  4. Cook on grill until chicken is cooked through.
