Hawaiian Chicken Kabobs

Plus, you can easily double or triple this recipe to accommodate your guests because I know everyone will be going for seconds! You can also swap out any of the vegetables or even use a different protein option, rather than chicken.

Ingredients

Marinade
  • 3 tbsp pineapple juice
  • 1 tbsp honey *avoid if following The Myers Way® or AIP diet
  • 3 tbsp bone broth
  • 1 tbsp apple cider vinegar
  • 1 tbsp sesame oil
  • 1 tbsp ginger diced
  • 3 cloves garlic minced
Kabobs
  • 1 lb chicken cubed
  • 1 cup pineapple squared
  • 1 zucchini
  • 1 squash
  • 1 red onion cut into 1 inch pieces
  • skewers

Instructions

  1. Combine marinade ingredients. Place chicken into a large dish or bowl and cover with marinade. Allow to marinate in refrigerator for 2-3 hours or overnight.

  2. In the meantime, soak skewers in water (if wooden).

  3. Place veggies and chicken on skewers in whatever order you chose.

  4. Cook on grill until chicken is cooked through.
