Garlic and Herb Cauliflower ‘Mashed Potatoes’

Garlic and Herb Cauliflower ‘Mashed Potatoes’

Ingredients

  • 5 cups cauliflower about 1 head
  • 1 yellow onion
  • 3 cloves garlic minced
  • 1 Tbsp thyme chopped
  • 1 Tbsp rosemary chopped
  • 1 tsp ground black pepper
  • 1 tsp sea salt
  • 1 Tbsp coconut oil

Instructions

  1. Cut cauliflower into florets and steam until soft- about 10 minutes.
  2. Season with black pepper and sea salt.
  3. Warm 1 tbsp coconut oil in saucepan over medium heat.
  4. Sauté chopped onion, minced garlic, thyme and rosemary until onions are translucent. Set aside.
  5. Place cauliflower into high-speed blender or food processor. Add sautéed onion, garlic and herb mixture. Process until smooth.
  6. Sprinkle with black pepper and serve warm.
