Fried Tostones

This Fried Tostones dish is great to enjoy as a tasty appetizer with friends! It’s a simple, sweet, and healthy spin on a food traditionally fried in unhealthy oils – perfect as a substitution for fries or hashbrowns!

Plantains are a wonderful prebiotic, meaning they feed the good bacteria in your large intestines. That good bacteria in turn produces short chain fatty acids, or SCFA’s. One SCFA in particular, butyrate, is especially important in protecting the brain, is an overall anti-carcinogenic, and is extremely anti-inflammatory!

Ingredients

  • 1 plantain
  • 1 cup coconut oil
  • 1 tsp cinnamon
  • sea salt

Instructions

  1. Cut plantain horizontally in 3 inch cubes.
  2. Heat oil in pan then add plantains. Brown on both sides.
  3. Take plantains off heat and mash down flat like the shape of a pancake.
  4. Re-fry in oil on both sides until crispy. Top with cinnamon and sea salt. Serve warm.
