Crockpot Pork Sirloin and Apple Roast

This Crockpot Pork Sirloin and Apple Roast is a great (and tasty) option for dinner on The Myers Way® protocol. I like to serve this dish with oven-roasted carrots and mashed parsnips.

Apples contain a flavonoid called quercetin which is a potent antioxidant, fighting against free radicals which can damage cells and their DNA. Consumption of quercetin has been linked to improvement in overall cardiovascular health by encouraging blood flow and protecting against the oxidation of LDL cholesterol. Quercetin has also been reported to have anti-histamine effects and may thus be beneficial in those with rashes, hives, and other skin conditions as well as in those with many food sensitivities/allergies.

Crockpot Pork Sirloin and Apple Roast

Ingredients

Rub
  • 1/2 tsp  cinnamon
  • 1 tsp sea salt
  • 1 tsp garlic powder
Roast
  • 5 lb pork sirloin roast
  • 1 Tbsp coconut oil
  • 1 apple sliced
  • 1 onion sliced
  • 2 cups apple juice
  • 2 Tbsp apple cider vinegar

Instructions

  1. Mix together rub ingredients and rub onto roast.
  2. In a skillet, brown the roast in coconut oil.
  3. Place the roast in a crock pot with apple juice and apple cider vinegar.
  4. Cook sliced apple and onion in skillet until browned. Place on top of the roast.
  5. Cook all ingredients in the crockpot on low for 6-8 hours.
